Gut Soothing Chicken Soup
Ingredients
- 1 boneless skinless chicken breast, cut into pieces
- 2 celery stalks chopped
- 1 medium carrot peeled and sliced
- 1 or 2 medium potatoes cut into pieces
- 1 leek white and light green parts only, washed and chopped
- 1 cup pumpkin peeled and diced
- 6 cups water or vegetable broth
- 1 tbsp olive oil
- 2-3 tsp salt
- 4 sprigs fresh thyme or 1 teaspoon dried thyme
- ½ tsp ground coriander optional
- ¼ cup fresh parsley chopped
Instructions
- In a large pot, heat the oil over medium heat and gently sauté the leek and chicken for about 5 minutes or until the leek is tender and the chicken begins to lose its pinkish color.
- Add the chopped vegetables, water or vegetable broth, 2 teaspoons salt, thyme, and coriander (if using) and bring to a boil.
- Once it starts to boil, reduce the heat to low and cover the pot with a lid. Let the soup simmer until the chicken is well cooked and the vegetables are tender, 25 to 30 minutes.
- Add parsley (if using) to the soup and stir to incorporate. Taste the soup and, if necessary, add 1 more teaspoon of salt.
